Your November 6th post invited people to provide more informations. Here are some informations extracted either from the Breau genealogy book (published in 1999) or fro my Breau database (updated regularely since then). I am not correcting all informations because it would make a too large message but only some of them:
Vincent Breaux: we don't know where he was born except to mention that it was in France. He had 12 children (rather than 11); another child was found in the 1678 census. You had a question about Rene Breaux:

The Rene Brault marriage to Marie Renaulme was not found to my knowledge. There was only the christening of their son Vincent that was found (16 may 1629) mentionning them as his parents [remember that this is not our Vincent]. Since the town in wich they were is a very small place (even today) it was surely overlooked from the protestant conflicts.
Jean Breaux and Anne Chiasson had 9 children (rather than 11); your Marie (9) and Jeanne (4) are the same person: Marie-Jeanne and your Ambroise (11) is the same as Ambroise (2)
Ambroise Breaux was baptized 11 oct (rather than 10) and married 29 oct (rather than 26). They had 9 children rather than 1
Athanase Breaux died before 1794 (rather than in 1794), he married 17 feb (rather than 1 feb). He had 7 children rather than 11: Marie (1) is the same as Marie (5), Jean Baptiste (8) is the same as Jean Baptiste (9), Pablo (2) and Paul Hippolite (7) are the same person and I cannot find any Jean Joseph (10) born in 1779.
You had some questions on Athanase:

At the time of the 1755 expulsion from Acadia by the british, Athanase followed his parents and took refuge at Riviere Miramichi where he stayed until 1765 at wich time he went down to Louisiana.
Simon Breaux was b. 6 feb 1780 in St. James LA and married 10 jan 1799
Joseph Achilles Breaux m. 31 jan 1825 in Thibodeaux LA Rosalie Marie Dugas
Amadeo Simonatrelle Breaux was b. 5 apr 1828 in Thibodeaux LA and m. 19 jul 1847 at the same place. They had 10 children (rather than 11): Marie (8) and Leocade (9) are the same person Marie Leocadie b. 8 dec 1857 in Thibodeaux LA
Arthur John Breaux (aka Leon Arthur) was b. 21 feb 1866 in Thibodeaux LA; I have him married in Lockport (rather than LaFourche). He had 11 children (rather than 8): there is also a Lilia Eve (Mabel) Breaux b. 14 jul 1895, a Lilia Marie Breaux b. 20 apr 1901 and a Gladys Breaux b. 1910
