Marc,
This is not from official sources, but from what I have read in genealogy sites.
Economic ativities:
Most of European immigrants came as farm workers. Here and there a tailor, a shoemaker, a small-business man, etc.
Port of departure:
Bremenhaven and Hamburg
Destination:
Southern states (Rio Grande do Sul, Santa Catarina e ParanĂ¡) and some to Southwest (Espirito Santo). Never heard of Austrians in Northeastern (Bahia).

> Imigracao > Contratos > Austriacos) has a list of Austrians who settled in that state. Also in the link Recenseamento there are some .pdf files listing names of european settlers.
Last, as you probably know, Poland didn't exist as a nation at that time. So, polish who lived in areas ruled by the Austrian-Hungarian Empire immigrated as 'austrians'.
