Bowring/Bowering - England to Quebec

Looking for information on the descendents/ancestors of Charles (Bowering) Bowring. My Bowring Family has used both name variations of Bowring / Bowering.

My 3great grandfather, Charles Bowring m. Rachell Watts. He was from England, born 1811, most likely Winterbourne St. Martin, Dorset, England, the son of Isaac Bowering and Ruth Bowering.
It seems as if the surname spelling was changed about the time Charles immigrated to Canada in 1845 with his wife and children.

Canadian records and Bible records are in the name BOWRING, but an envelope I found in the family bible was addressed to Mrs. C BOWERING of Canada East and Postal stamped Dorchester My 7 1857. There was no return name or address.
