Boudrot to Boudreau to Boudreaux

I am interested in how/why the surname of Boudrot (Acadia) changed to Boudreaux or Boudreaux in Lousiana. My family story has it that the X was added at the end of the name as an indication that the person was checked off a list of some sort. Possibly passenger list. Any clues?
