Good question for which I really have no answer. All I can say is that people in those days really didn't care about their age or when their birthdays were celebrated, especially among the Acadians. As for the death certificate, remember, he wasn't alive to give an exact date... someone else did it for him.
If one person made an error on a document, chances are it followed him his whole life long. And without a birth or baptism certificate to prove the real date, how could he ever correct it? Other than that, I don't know what to tell you, but incertitudes of this type at this time in history were common. At least the year was correct and both April and August started with an "A". As for censuses, he was probably too young to remember being born in Canada, and saying Massachusetts was his birthplace was probably an easier solution than having to explain anything to the census taker.
