Regarding Borst and Boerst, the German language has a special feature called an "umlaut", which is represented by two dots placed above a vowel.The "umlaut" represents a different in pronunciation.Without the "umlaut", the English-equivalent pronunciation is "Borst" with a long O.With the "umlaut", the pronunciation is "Berst".
Writers of English tend to ignore the "umlaut", although the "umlaut" is properly represented in English by adding an E to the umlauted vowel; hence Boerst.
In conclusion, there is a high probability that children of Boerst parents write their names as Borst.
