For Ellen Beston B ????, Mitchelstown RC parish, Co. Cork, with the father's forename unknown, I found 1 rcd, 1841, in the major online database for Irish rcds. Father's forename is John. The 1855 date stated in your post would have made her 3 yrs old when she had her 1st child; this is a bit early even by Irish standards. The 1841 date is about right.
For Ellen Beston M 1856 +/- 2 yrs, Co. Cork, I found 0 rcds. People in the workhouse rarely had the means for a "donation" to the priest performing the marriage rite. Therefore, the event likely went unrecorded.
