Edward R and Estephana Torres Ancestry

I am looking for family history on the paternal side of my family. My grandparents were Edward R. and Estephana Torres they owned the bakery in Cayo. Apparently when my ancestors came to Belize, the name was Simon Estephan(o) however it was changed around to read, Estephan Simon(e). I do not know much past my grandparents.

Any information or direction that you can provide is appreciated.
