I have a Henry Bartels of Alsace-Lorraine whose 5 Children were born in Germany. The children were

Henry was a Ships Chandlerin Bremerhaven Germany
whom Married a german woman that is thought to have been named Katerine * could this possibly be your grandmothers grandmother Kathering? The Bartels side comming from Germany and Alsace-Lorraine.
Christian Henry also usedthe name Henry. The age of Christian would be closer to the same as yours. Now if your grandmothers grandmother was namedHarritthen its a possible match. Because it states he was born in Germany, just as your was. and his father being a Ships Chandler could easily put them in San Francisco on the way to MO.
Harrits family had alreadybeen in MO and her 3 brothersand sister all married and lived in Mo. and at least one was in St Louis. Which again could possibly work, since you mentioned searching MO census info.
Now I know a bunch of the info on the very sparse 40 year old geneaology attempt that is riddled with mistakes. I think my Great Grandfather could possibly be your Henry.
The thing states my grandparents married in SF, which was impossible, because my grand father met my grandma in Nebraska in his teens when he was traveling with the Buffalo Bill Wild West show. He met my grandmother whom grew up with and went to school withIrma Cody, the daughter of Buffalo Bill, and sometime around 1909 I think they met and a few years laterthey married. Then they moved to San Diego where my grandmother's grandma was a teacher.

By the way if it turns out my Henry is the same as yours, there are also a huge amount of Bartels that are in Hawaii, as we are related to the Rev. Dwight Baldwin Family and the Alexander Family, whom were among the first missionaries in Hawaii. Baldwin was very loved by the Hawaiian People for his efforts that saved 10000 people from Small Pox Death, he is considered a hero and his house is a museum.
