Hi Jennifer Farringer,
I just found this site for geneology.
I don't know if you ever got an answer to your question about your great grandparents, but I will post what info I have.
Parents of Theotime (Otime) Barrios were Raymond (Reimont) Barrios, born 12/25/1821, died 9/25/1871. Married Seraphine Arceneau, 4/20/1846, daughter of Nicholas Arceneau and Carmelite Breaux.
Mary Parr, born 7/12/1879, daughter of Regis Parr & Adeline Roger at Lockport, LA.
I can go back futher than this. I was fortunate enough to get a family tree book that was put together by Alfred Barrios who lived near me in Marrero, LA. I just recently decided to look at it again and I think I will try to start working on. Mr Barrios is very old now and could not continue to work on it.
