Hi Will,

Sorry about the slight delay. I've had a look at the 1881 Census records on CD-ROM, and there were 14 Aylotts in Hitchin, from three families (in Parcels Yard, Foundry Road & Ickleford Road).

Assuming your grandfather descended from one of these families, I'd say it's 99% certain that he originated from William Aliott, who moved to Walkern, Herts in c.1650. If you were able to find Christopher's father's name, it would probably be quite easy to trace the family name all the way back to then.
