In Polish and in numerous other Slavic languages "zajac" (this is a proper Polish spelling) is the term for a wild rabbit or hare. It's also avery common surname. The other spelling is an attempt to reproduce the pronounciation which is ZIYOTZ
The other name is based on the adjective "surowy/surovy" which means "raw, crude or cruel".
Galicia was the most southerly portion of Poland. But, between 1772-1795 Prussia, Astria and The Russian Empire took portions of Poland till it no longer existed. Poland was not reconstituted until 1920. Galicia,in German Galizen, was Austria's piece of the pie.
