Armistead vs. Armitstead

Looking for information on Armistead family of northeast and west Texas - Hunt and Tom Green counties, late 1800's thru 1940's.

My father was Eugene Armistead, b. 1906 Commerce, Hunt County, Texas. He married Ruth Elizabeth Crouch June 1940, San Angelo, Tom Green County, Texas.

I have documentation indicating his father was Thomas Armitstead (note the different surname).

Does anyone have information on name changes between Armistead and Armitstead?
