Catuosco, Argentina 1895 census

I have found a person of interest on the 1895 argentina census. Her name is Rosaria Catuosco, 10 children, married 43 years, widow. In Italy a woman goes usually by her birth name, would it be the same in Argentina, would the Catuosco name be her name or that of her husband? And how difficult is it to get records from there?
