1900 Noble Co MN Seward TWP pg 78: John Weichmann 55 b. Dec 1844 in Germany of German parents also b. in Germany; Wilhemina 36 b. Nov 1863 (birth info same as John's), had borne three children and all still living; Sophie 7 b. July 1892; John 5 b. Apr 1895; and Henry 1 b. June 1898. Now here's an oddity...it indicates they have only been md. five years. The next census bears this out showing they have been md. 15 years. Looks like John may have come to the USA in 1884. In 1910, they were in St Francis Co AR Wheatley TWP pg 244. John is 65, Wilhemina is 46; Sophie 18; John 15; Henry 12---and SURPRISE (maybe?)...there is a one-year old girl, Minnie, shown as an adopted daughter. Brings up the question of whether maybe Sophie had had an illegitimate child taken by the parents to raise---although it shows that Minnie's mother was b. in KY. As for why they haven't been found on the 1920 census, it could be anything from a misspelling of the name to a simple matter of the census taker just missing them. My grandfather, grandmother and father, who would have been 2-yrs-old, are not on the 1920 census either and I looked line by line in the township where they lived.
