My family spells it Aman but I have seen a lot of variations. Our Amans came from Switzerland and/or the Palatinate of the Rhine. An Aman cousin who visited Altikan-en-thur, Switzerland, (from where she felt our Amans came) came back with the information that it meant "Mayor (or leader) of the town. This is strictly anecdotal information but thought I would mention it.
My ancestors was Philip Aman who arrived in NC in 1709/10 with Baron Christopher de Graffenreidt's New Bern colonists.
