This Everett family on the 1880 census in Harrison County is a different family. Why would Florence Ada GRIMES be called Mary?

John Ross Everitt and Florence Ada Grimes were married 30 Nov 1881. How could they have a son, Albert, born in 1850 or a son, Ross, born in about 1859?

Mary Everett, age 56, on the census would have been born about 1824.

You must mean that Ross is 59 years old. That would mean he was born about 1821.

I do not find another John Ross nor any Ross Everett/Everitt in the Register book index.
