found this in the 1900 census Alaska

Also I did a little reseach on the Walt Diney Dooc of the seven dwarfs...in an article about the seven dwarfs it said that when they named Doc it was after and here is a statement about it
In bringing the characters to life, Walt insisted each dwarf had to have a definite personality, so work began in differentiating them by voice, gesture and name. Walt claimed he knew some domineering doctors, so they named the dwarfs’ bossy leader, Doc. They made Doc stand well back on his heels with his wrists pressed to his hips, to convey pompousness.
So perhaps your Great Uncle had another trade as a doctor
